And whipped cream? Stop right there. Half-and-half will not whip into stiff peaks. It’ll turn into a runny, sad puddle. Unless you want to cry into your dessert, keep heavy cream for whipping. Or cheat with a bit of gelatin—but that’s a whole other conversation.
Ice Cream? Maybe Not
Homemade ice cream needs that high fat to stay creamy. Use half-and-half, and you’ll get ice crystals. It’ll be crunchy in the wrong way. Your freezer will taste like regret.
