You’ve heard it: “Sweet potato skin has toxins!” Let me stop you right there. That’s a myth for regular sweet potatoes (the orange kind you find at the grocery store). They are totally safe to eat.
There is a tiny grain of truth for “bitter wild yams” you might find in some traditional medicine, but you’re not eating those. You’re eating the lovely, normal, orange-fleshed kind. So relax.
Just make sure they’re not green or sprouting weird tentacles. If they are, toss them. That’s a whole other horror movie.
