This is my favorite geeky part. When water freezes, it actually gives off heat. Seriously. It’s called the latent heat of fusion. Sounds fancy, right?

Imagine water molecules holding hands in a circle. To freeze, they have to tighten that circle, releasing energy. That energy warms the air around them. It’s the ultimate paradox: freezing makes things warmer for a second.

The reverse is true too. When ice melts, it sucks heat out of the environment. That’s why your drink stays cold. The ice is actively stealing warmth from the air. Rude, but effective.

What About Pressure?

Here’s a nerdier twist. If you put enough pressure on water, you can actually stop it from freezing—even below 32°F. Squeeze the molecules so tight they can’t form that fat crystal lattice.

This is how ice skates work. The blade's pressure melts a tiny layer of ice, creating a liquid film to glide on. You’re not skating on ice. You’re skating on a millimeter-thin puddle of water. Mind blown yet?

And if you crank the pressure up even more, you get weird ice. There are at least 18 different types of ice crystals! Some exist only in outer space or deep inside giant planets. Water is an overachiever.
