Do not use laundry detergent. Do not use baking soda’s evil twin, washing soda (that will turn your muffins into a chemical spill). And for the love of all that is fluffy, do not just leave the baking soda out. Your shortbread will be dense enough to use as a doorstop. I tried it once. The cookie didn’t break—the plate broke.
Also, never substitute baking soda with yeast unless you want your cake to taste like a bread bowl that forgot its lines. Yeast is a living thing that needs time and patience. You are panicking about cookies in ten minutes. Yeast will laugh at your timeline.
