All you need is whole milk (or even 2% in a pinch) and unsalted butter. For every one cup of half-and-half you need, use ¾ cup milk and ¼ cup melted butter.
Melt the butter first (15 seconds in the microwave does it), then whisk it into the milk. Boom. You just saved dinner. The butter gives you that silky richness, while the milk keeps it from being a heart attack in a glass.
What if I only have skim milk?
Look at you, trying to be healthy while making mac and cheese. I respect that. But skim milk is basically fat-free water that’s been to college and learned better. You’ll need to use a tad more butter—like 3 tablespoons—to compensate for the missing fat.
It won’t be exactly the same, but your pasta will still thank you. And hey, you can still feel smug about your calorie count.
